The vineyards and terroir
are our own, planted in 2005, located in the village of Gorno Botevo, near Stara Zagora. They have been grown organically since 2015. Soils are cinnamon forest leached. The climate is moderately continental, characterized by mild winters, wet springs and dry summers. The soils are very well stocked with water and nutrients and, combined with the abundant sunshine, guarantee a good metabolism of the vine and the possibility of maximum accumulation of more color and structure in the grapes.
The Fermentation
takes place entirely in stainless steel tanks, with cold pre-fermentative maceration for 5-7 days before fermentation, followed by fermentation for about 10 days and post-fermentative maceration for 7-12 days for the different varieties. Malolactic fermentation is carried out in stainless steel vat.
The Aging in the particular vintage is for a period of 10 months in stainless steel vat with fine lees.
Our Tasting notes
This cuvée with the same composition as his big brother 'Black Shadow 2019' but without oak aging, just in INOX tanks to deliver more pure expression and fruitiness of the grapes. He comes with a rich, opaque garnet colour. An attractive nose with hints of dark chocolate, coffee, blueberry and dried tomato. A smooth, melting body with fine grainy tannins and a long finish, dominated by sour cherry, chocolate and spices.
