Vineyards: 100% Cabernet Franc from Vetrino village, PGI Danube Plain. The vines are 14 years old, located near the village of Vetrino, Varna region. The soil is alluvial and stony. The altitude is 300 m.
Technology: The grapes are picked by hand and transported to a cold room. The chilled grapes are sorted by hand and crushed in small open top fermenters. The crushed grapes are cooled and cold-soaked for 3 days until the desired colour is achieved, after which they are pressed. The must naturally increases its temperature and begins spontaneous alcoholic fermentation. The temperature is controlled in the range of 18-22°С. After 14 days the wine is transferred to small Bulgarian barrels for malolactic fermentation.
Technical details: Alcohol – 13% vol ; Titratable acids – 5 g/l ; Residual sugars – 4 g/l
Aging: The wine is aged for 3 months in Bulgarian barrels on the 'fine lees' and 3 months in a stainless-steel vessel. The wine is crafted with minimal intervention and is unfiltered. The appearance of a noble lees is possible.
Our Tasting Notes: The colour is sparkling red almost rosé. The nose is rich in intense fruit aromas (strawberry, raspberry, cherry) complemented by the typical green pyrazine character of the variety (green en red bell-pepper). Elegant, medium body with soft, bright tannins and fresh acidity. An interesting and unconventional interpretation of the Cabernet Franc variety from the Northern Black Sea region. This is the wine for people that don't like to drink red wine in the Summer. Serve slightly chill between 12° and 16°C.
Food pairing: It goes well with fish, tone steak, seafood, crustaceans, white meats, sausages and soft cheeses.
