Variety: 100% Dimyat (Bulgarian variety)
Vintage: 2024
Vineyards: City of Byala, Varna region, PGU Danube Plain. The vines are over 40 years old and are near the seacoast at the picturesque area and beach of Kara Dere. The soil is highly calcareous. The exposure is south-southeast. Altitude – 40 m.
Technology: The grapes are picked by hand in small boxes and transported to a cold room. The cooled grapes are manually sorted, crushed, and gently pressed at low pressure. The finest must is cold settled and racked for alcoholic fermentation. The temperature of alcoholic fermentation is controlled at 15-18°C.
Technical details: Alcohol – 11% ; Acids – 6.9 g/l ; pH – 3.2; Residual sugars – 1 g/l
Aging: The wine is aged for 3 months on the fine lees. Made with minimal intervention. The appearance of a noble lees is possible.
Tasting Notes: Dimyat from the vineyards near Byala is pale yellow with slight green hues. The aroma bears the characteristics of the variety - neutral, delicate nose of green apple and peapod, distinct minerality and saltiness in the taste. Tight, muscular body with excellent freshness and an inviting finish. Serve between 8° and 10°C. Slightly richer and oxidative than the previous vintage 2023.
Food pairing: It goes well with fish, seafood, crustaceans, white meats. Delicate cheeses such as brie, mozzarella and ricotta are also a good combination.
