This natural sparkling wine, a Pet-Nat in Blanc de Noir style, is made from the Bulgarian red grape Mavrud. The grapes come from the renowned Novi Izvor vineyard, near the city of Plovdiv in the Thracian Valley, where the vines grow on black and cinnamon-colored forest soils. The vines, over 50 years old, deliver naturally low yields and consistently expressive harvests year after year.
The grapes are handpicked and carefully sorted, followed by gentle pressing without maceration. Fermentation occurs spontaneously, and the wine is bottled during the final phase of alcoholic fermentation, which then completes in the bottle. Disgorged at the end of January 2024.Produced without added sulfites. Production of 8280 bottels for vintage 2023.
