• Rubin Brestovitsa 2022 1,5L Magnum

The Rubin Magnum 1.5L is released only when the standard 750ml bottle of the same vintage is no longer available. Each magnum comes individually packaged in a special gift box. Only 314 magnums of the Rubin 2022 were bottled (each of it numbered). Wines generally age more gracefully in large-format bottles, allowing for a finer and slower development.

Rubin a traditional Bulgarian grape variety, derived from a cross between Syrah and Nebbiolo ! Although Rubin was originally crossed in the north of Bulgaria, it thrives exceptionally well in the south of the country. The oldest vineyards with Rubin are located in Ivailovgrad and Plovdiv. Georgiev & Milkov collaborate with winegrowers in Brestovits, a village near Plovdiv and close to the Rhodope Mountains. Here, more than 45-year-old vines grow on light brown forest soils. Rubin is an intriguing grape to work with, as it can evolve from unripe to overripe in just one week. This results in a unique and distinctive expression in the wines. While the exact clones of the variety remain largely unknown, Plovdiv and Ivailovgrad regions produce two very different wine styles.

Vinification: Handpicked grapes in trays. Cold maceration with the skins for 5-7 days. Spontaneous alcohol and malolactic fermentation in oak barrels. 40 % of the quantity aged in Bulgarian oak. 60% in used French barriques.

Alcohol -13,5% vol; Residual sugar - 2,9 gr/l ; TA - 5,06 gr/l ; pH -3,72

Our tasting notes: Medium deep ruby color. Nose is medium intensive with aromas of ripe red cherry, red plums and small dark berries. Complemented by notes of cedarwood, toast and sweet spices. On the palate is dry, medium alcohol, nice integrated acidity and ripe tannins. The aromas are to find in the palate as well. Intensive and juicy texture with spicey long finish. Quality work with the oak.

With food: red meats, venison, Stew, Iberico, grilled eggplant and asparagus
