The grapes were harvested on September 9, with a naturally low yield of 400 kg per decare. After spontaneous fermentation in a stainless steel vessel, the wine matures in only 3 barrels - 1 Bulgarian 400 L, 1 Hungarian 500 L, and 1 Bulgarian 500 l. The total aging in the oak is 26 months, and the interesting approach here is that after the 20th month the 3 barrels were mixed and then returned as a blend in the same barrels for an additional aging of 6 months. The wine has matured for another 3 years (!) In the bottle before entering the market in November 2020. Unfiltered - a noble precipitate may appear. Produced in a limited quantity of 1,912 bottles! We recommend decanting the wine before enjoy it!
Our Tasting description:
thick and deep garnet color. Complex aromas of dark chocolate with black ripe fruits confit, licorice, spices and tobacco are revealed. They find their natural continuation in a powerful and multi-layered body with noble development, in which we find more notes of mocha, smoke, dried flowers and ink. At the end there is a long spicy memory of sweet spices, leather and a box of cigars. Complex and noble wine with significant potential for aging for at least 7 years.
We strongly recommend decanting for at least 30 minutes before consumption!
Best with:
beef steak, stewed beef tongue, game terrines, mature cheeses, dark chocolate desserts
