Vineyard & Terroir: Nevsha, North-East Bulgaria, the vineyard sits at 120 m altitude with an east-facing exposure, on exceptional chalk limestone soil scattered with marine fossils from the late Cretaceous period — 83 to 89 million years old. The plant material is a massal selection sourced directly from Burgundy, grown at 6,100 vines per hectare using the demanding Guyot method (Simonit & Sirch). Viticulture is organic with biodynamic practices, without herbicides or insecticides.
Winemaking & Ageing: Manual harvest on 24–29 August in small crates. Gentle pneumatic pressing followed by 24 hours cold settling. Wild fermentation in 500L Chassin barrels and Clayver ceramic amphorae, without added SO₂. Aged for 12 months on oak and amphorae, followed by 4 months in stainless steel.
Tasting Notes: Expressive and refined nose of melon, pear, pineapple and white flowers, complemented by a distinctive chalky minerality and subtle notes of vanilla, butter and wax. Medium-bodied, exceptionally juicy, pure and focused, with a marked acidity and a memorable, long-lasting finish. A wine with genuine cellar potential and a gastronomic destination.
Food Pairing: poultry, lamb, vol-au-vent, fish, ripe soft cheeses.
