Vineyard & Terroir Nevsha, North-East Bulgaria , the vineyard sits at 120 m altitude with an east-facing exposure, on exceptional chalk limestone soil scattered with marine fossils from the late Cretaceous period — 83 to 89 million years old. The plant material is a massal selection sourced directly from Burgundy, grown at 6,100 to 9,200 vines per hectare using the demanding Guyot method (Simonit & Sirch). Viticulture is organic with biodynamic practices, without herbicides or insecticides.

Winemaking & Ageing Manual harvest on 8–10 September in small crates. Wild fermentation without added SO₂. 20% whole cluster fermentation for extra complexity and structure. Aged for 18 months in 228L Chassin barrels (second and third use) and Clayver ceramic amphorae.

Tasting Notes A restrained yet inviting nose of small red fruits, dried spices and flowers. Beautifully textured and balanced between fruit and alcohol on the palate, with ripe silky tannins and a multi-layered, refined profile. Long, juicy finish. Cellar potential of 10+ years.

Food Pairing: small game, poultry such as wood pigeon and quail, rack of lamb, tuna steak, semi-ripened cheeses.
