A typical and very natural Syrah (only sulphites added), expressing very purely the terror of South Sakar, Bulgaria. For the first year is fermented spontaneously, with the natural yeast of the vineyard or so-called "Wild" yeast. Malolactic fermentation is also spontaneous. It matured for 12 months, only in a neutral vessel, without oak (‘sans barrique’ in French) and subsequently developed in the bottle for almost 2 years before being released. A complete wine and at the same time with excellent potential for aging in bottle, bearing the signature and the elegant handwriting of the winemaker Maria Stoeva (literally and figuratively). A limited lot of 4 720 bottles only!
Beautiful purple colour with ink shades. The nose reveals a complex attack of aromas of ripe cherry, plums and black chocolate with peppery nuances that blend into the taste, with the addition of berries and plums. Elegant velvety body with soft tannins and mouth-filling texture that finish with elegant spice. Tasty and complex wine. Ageing potential (2019 -2026).
Food match: feathered game (partridges, quail) with fruit sauces, wild mushroom risotto, turkey with chestnuts, medium ripe cheeses
