Vinification: the grapes are late harvested, harvested 3 weeks after the grapes intended for dry wines. It is additionally left in a ventilated place to reduce the water content and increase the concentration of sugars and flavors in the beans. The wine has a natural residual sugar content of 80 g. After fermentation, aged in old oak barrels for 2 years.
Our tasting notes:
Dark deep garnet color. Nose is rich and complex. Aromas are of candied dark fruit, cherries, plums, figs, jam, very influential nose, sweet spices and leather with dark chocolate and some port wine notes. In the mouth it is a bit sweet but with finesse due to high acids that keep the wine in an exciting and straight balance. Taste is noble, balanced with nice structure, and with soft warm finish. In the mouth the profile can be found as in the nose. Impressive wine and for us the first sweet (Late Harvest) wine from Melnik grape.
Very pleasant and culinary fine wine from Bulgaria.
Best with:mature cheese, desserts - based on chocolate, Tiramisu cake, confit pheasant - with sweet garnishes, fois gras on toast or baked, on its own as a digestive.
