This French variety, Cabernet Franc, has found a second home in Bulgaria, particularly in the southern region known as the Thracian Valley. In fact, most of the plantings of this grape are found here. The region is renowned for its high-quality Cabernet Franc, often made as a 100% varietal (mono-cépage), with excellent aging potential. The vineyards of Four Friends winery for this grape variety are located right next to the winery in the village of Gorno Botevo, in the heart of the Thracian Valley.
Our tasting notes: A dense and beautiful dark ruby colour with a subtle violet hue. The nose is elegant and typical of Cabernet Franc, revealing notes of red pepper, plum, blackcurrant, and blueberry, enhanced by hints of vanilla, charred wood, and a touch of chalky, meaty undertones. On the palate, the wine is lively, medium to full-bodied, with a firm structure and velvety ripe tannins. The long finish is marked by flavors of mint, chocolate, blueberry and bell pepper. Quality oak work and well integrated, and the high acidity adds complexity, making the wine both vibrant and enjoyable. While it can be enjoyed now, it also has excellent aging potential.
The production method employed by winemaker Ilian Petrov of Four Friends is more of a classic approach - cold maceration for extra colour, flavour, and texture extraction, fermentation in stainless steel tanks, and aging for 14 months in French oak barrels (30% new, 70% used second and third fill).
Pair with grilled steaks, lamb chops or burgers, stews and braised dishes, aged cheeses like Cheddar, Gouda, or even Bulgarian cheeses like Kashkaval, and roasted vegetables.
