The vineyards and Terroir
The grapes for this Blend - Grenache (40%), Syrah (36%), Mourvèdre (24%) are from own vineyards planted in 2005, located in the village of Gorno Botevo, near Stara Zagora. They have been grown organically since 2015. Soils are cinnamon forest. Climate there – in central Thracian valley is moderately continental, characterized by mild winters, wet springs and dry summers. The soils are very well stocked with water and nutrients and combined with the abundant sunshine, guarantee a good metabolism of the vine and the possibility of maximum accumulation of more colour and structure in the grapes.
The vinification
takes place entirely in stainless steel tanks, with cold pre-fermentative maceration for 5-7 days, followed by fermentation for about 10 days and post-fermentative maceration for 7-12 days for each variety separately. Malolactic fermentation is carried out in oak barrels alongside the aging for 16 months specifically for this 2018 vintage. Aging in bottle for 30 months prior release.
Our Tasting notes
Colour: dark and concentrate with some garnish shades.
Nose: as suggested expressive, open and powerful. Aromas of dark ripe and dried fruit. Dried spices like black peppers, cinnamon, Tabaco leaf, extra notes of leather and dark chocolate.
On the Pallet: dry, juicy and with great structure, backed with nice ripe tannins and the taste confirm the nose of ripe and dry fruit with good acidity and nicely integrated quality oak. Finish is long, smooth and warm suggesting the southern terroir. Wine with cellaring for about 10 years more.
