100% Gergana – white Bulgarian grape variety, a cross between Dimyat and Muscat Ottonel, officially possessed only by Tsarev Brod winery
Vineyards
Oldest vineyards of Tsarev Brod, planted in 2011, double cordon technique, 30-50kg/ha yield, 230-250m altitude, loess soil. Grapes hand-picked end August 2022.
Vinification
Stainless steel fermentation at 16-17°C with cultivated yeast for red grape varieties – using yeast for red, but we make white…it is helpful for this wine. White wines ferment at lower temperature compared to red wine, so when we use the yeast for red and we make white, the yeast can’t show its full potential and suppresses a part of the aromatic profile of the wine. So, this way we don’t have an intrusive aromatic “Muscatish” wine, we have an aromatic but balanced white wine. 6 months of aging on the lees (sur lie) in stainless steel container with no added preservatives.
After that a bottling and a second fermentation take part, the wine develops for 24 months in the bottle.
Tasting notes
beautiful gold-ish color. Complex nose with notes of yellow apple, grapefruit and garden flowers. Fuller body with well-integrated bubbles. Fresh taste, yet complex with reminding of apple and citrus and almond and walnut. Long lasting, balanced aftertaste.
Aging potential – the wine can age for couple years with expected positive development
