Vintage: 2024
Region & Vineyard: From the Sakar region (Thracian Lowlands) in Bulgaria. Made from 100% Chardonnay sourced from 16-year-old vines on southwest-facing slopes near the village of Shishmanovo. The vineyards are dry-farmed, herbicide-free, and certified organic since 2024.
The soils are light sandy-clay with stones and excellent drainage, encouraging deep root growth and added complexity. A warm climate with cool nights and influences from the Maritsa River gives the wine its freshness.
Winemaking: Hand-harvested in August 2024. After gentle pressing, fermentation takes place spontaneously in 400L Bulgarian oak barrels using natural yeasts. The wine is then aged 10 months sur lie without new oak, preserving purity of fruit while adding structure and finesse. After 6 months of bottle aging, the wine shows great balance, freshness, and subtle oak integration.
Unfiltered and not cold-stabilized – harmless natural crystals may occur.
Our tasting notes: Rich, golden colour suggests the richness of the wine. With ripe fruits such as mango, citrus fruits, pear with tight and mineral nose in the background aromas of brioche, croissant, vanilla some creamy notes. Fresh on the palate, with ripe citrus and pear, mango fruit with a hint of cream, vanilla. Taste is round, rich well balanced and integrated quality oak and the finish is quite long with again mineral notes, delicate roasted nuts, and croissant. Real Top Chardonnay wine as it should be!
Best with: chicken and fish dishes with light sauces, King crab, scallops, seafood risotto or with cheese-mushrooms, cheeses (ripe Gouda or Bruges, Brie, Camembert...), A foodie wine.
