Variety: 100% Pinot Noir
Vintage: 2022
Vineyards: Blaskovo village, Provadia municipality, Varna region, PGU Danube Plain. The vines are 15 years old, located at the foot of the Provadian plateau of Sirta. The soils are limestone-sandy, the exposure is southwest.
Technology: The grapes are picked by hand in small boxes and transported to a cold room. The cooled grapes are manually sorted and crushed in open top fermenters. After the natural increase in temperature, fermentation starts spontaneously and is controlled within the range of 20-25°C. Everyday pump overs, plunging and stomping help to achieve a gentle extraction. After fermentation, the grape mash is pressed into Bulgarian oak barrels for aging.
Technical details: Alcohol – 14% ; Acids – 7 g/l ; pH – 3.9 ; Residual sugars – 2 g/l
Aging: The wine is aged for 6 months in Bulgarian oak barrels and 6 months in stainless steel tanks. It is crafted with minimal intervention and is unfiltered. The appearance of a noble lees is possible.
Tasting Notes: Odessos Pinot Noir’s color is pale garnet, and it has a pleasant fruity aroma of ripe strawberries, cherries, and earthy notes. The wine has an elegant medium body with pleasant structure. Presenting a good balance between the fruity and earthy flavors.
Serve between 14° and 16°C.
Food pairing: It is successfully combined with delicate cheeses (brie, mozzarella, etc.) and with fresher and saltier cheeses such as feta or goat cheese. Tune steak. White or red meats as well as sausages are also suitable complements.
