Vineyard & philosophy
A fresh interpretation of the Mavrud grape, crafted in a lighter, easy-drinking style with soft tannins and refreshing acidity. Versatile at the table or enjoyable on its own, especially on warm days. The name says it all: Groovy Mavrud — a style reminiscent of a “claret”.
The grapes come from vineyards over 50 years old in Novi Izvor, a renowned village for this variety near Plovdiv, in the heart of the Thracian Valley.
Tasting notes
Light, bright ruby colour. Medium aromatic, with notes of red fruits such as redcurrant and raspberry. Subtle herbal and spicy nuances add complexity and depth, despite the wine’s lighter structure and moderate alcohol. The tannins are present yet supple, perfectly supporting the wine’s vibrant, groovy character.
Vinification
Hand-harvested grapes, collected in small crates. A short skin maceration of about two hours takes place in the press, followed by gentle pressing. The juice is then clarified naturally by gravity settling. Alcoholic fermentation occurs spontaneously, with 60% in stainless steel tanks and 40% in used oak barrels. Malolactic fermentation also takes place spontaneously in the same vessels. After ageing for 10 months, the different lots are blended. No sulfites are added, and the wine is bottled unfiltered in October 2025.
