Evmolpia is an Bulgarian grape variety, created from a cross between Merlot and Mavrud. The grapes are hand-harvested in mid-September from our own vineyards near the town of Shumen.
Fermentation takes place in small stainless-steel tanks of 500 and 1,000 liters, under temperature-controlled conditions. The winemaker chooses yeast typically used for white wines, aiming for a less fruity but more elegant and pure style.
The wine is then aged for eight months in new 400-liter French oak barrels, adding extra structure and complexity.
This wine is part of the Tsarev Brod “Bulgarian Series”, a collection that serves as an ambassador for the preservation of Bulgaria’s native grape varieties — such as Gergana, produced from the grape of the same cross.

A impressive deep purple red wine of the Evmolpia grape variety. It boasts blueberry, blackberry and prune aromas. Medium bodied, with fine ripe tannine, balanced with freshness and fruity finish.

solid fish disches, poultry - chicken and turkey, mushrooms, cheeses.
