The grapes are harvested in mid-September from own vineyards near the town of Shumen. The wine ferments in stainless steel vessels of 300 l, with 15% of whole grapes, de-stemmed by hand. The wine matures for 12 months with the whole grapes and is then transferred to vessels, 30% of which are French oak and 70% stainless steel. There it matures for 12 more months, before being bottled.
Our Tasting notes:
A wine that has a glittering golden colour. It boasts an intensive aroma with hints of gooseberries, white peach and nuts overall very intensive nose. Full-bodied and yet fresh, with a lingering spicy aftertaste and impressive concentration . Top Sauvignon Blanc that can further mature in bottle. We recommend to pair with food.
Best with:
Food-oriented wine! It pairs well with risotto, pasta, seafood and white meat, tapas, Asian dishes, asparagus, aperitif, chicken, goat cheese.
