6 Summer wines selected by Slavi <2025>

Bulgaria – A Country of History, Culture, and Surprising Wines

Traditionally known for its red wine production—often bold in style and high in alcohol. But that image is increasingly becoming a thing of the past!
Today, Bulgaria offers a wide range of refined wines: dry, with mineral notes and plenty of freshness. Perfect for the spring and summer season!

Join us on a flavourful journey through some of Bulgaria’s most beautiful wine regions and discover six carefully selected wines that truly capture the spirit of summer.

1. Pét-Nat 2023 – Tsarev Brod – 11.5% vol Sparkling and Refined

Pétillant Naturel—or simply Pét-Nat—is the perfect sparkling wine for just about any occasion.
This natural bubbly is made from Riesling, known for its lively acidity, fine fruit, and mineral character.

This Pét-Nat has become an emblematic wine of Tsarev Brod estate: light, fresh, and ideal as a summer aperitif or paired with light dishes.

2. Red Misket 2023 – ‘Why Not?’ – Georgiev / Milkov – 12.0% vol Floral, Fresh, and Local

The duo Georgiev & Milkov are known for their pure, low-intervention wines. Their focus lies entirely on authentic Bulgarian grape varieties, sourced from old vines—and you can taste it.

This Red Misket 2023 shines a light on a rare indigenous grape, seldom found outside Bulgaria.
The result? An elegant, floral white wine with fresh acidity and a mineral finish. Ideal as an aperitif, but also delightful with a cold starter, fresh salad, or spicy dishes.

3. Heritage Blanc de Noir 2023 – Edoardo Miroglio – 12.5% vol  White... from Pinot Noir? Absolutely!

Surprise yourself with this unique white wine, made from 100% Pinot Noir—the same grape used in Champagne, but here vinified as a still white wine.

Italian-Bulgarian winemaker Edoardo Miroglio has chosen this style deliberately—and it pays off: pure, crisp, and full of depth and balance. Perfect with seafood, shellfish, or a refined cold appetizer.

4. Pink Side of Rubin 2023 – Georgiev / Milkov – 12.5% vol  A Rosé with Character

From the Thracian Valley near Plovdiv comes this distinctive rosé made from Rubin—a unique cross between Syrah and Nebbiolo.

Fruity, spicy, and round in flavour, with one year of aging in acacia barrels for added structure and complexity.

Delicious with summer dishes like baked tomatoes or stuffed peppers, but also ideal as an aperitif with small bites.

5. Claret Cabernet Franc 2024 – Odessos Winery – 13% vol  Red Wine... Served Cold

Claret is the trend of the moment: a light red wine that’s meant to be served chilled—just like a rosé or white.

This elegant example from two winemaker brothers in Varna, on the northern Black Sea coast, is made from Cabernet Franc and bursts with pure, fresh red and dark fruit, along with the signature minerality of the coastal region.

Perfect as an aperitif or with cold meats, fish dishes, grilled vegetables, or BBQ fare. Also ideal for anyone who says: “I don’t drink red wine in summer.”

6. Syrah Sans Barrique 2021 – Bratanov Winery – 14% vol  A Classic Red... But Naturally Different

Finally, a proper red wine—yet still something special.
Yes, it’s bold and structured, but without any oak aging. No barrels, no embellishment—just the pure expression of Syrah, grown in the sun-drenched vineyards of southern Bulgaria.

Bratanov practices minimal intervention and relies on wild yeasts from the vineyard. No sprays, no chemicals—just grape, soil, and craftsmanship.

An excellent match for lamb, Mediterranean cuisine, or a BBQ with real flavour.
