• Pink Side of Rubin 2024


Rubin is a traditional Bulgarian grape variety, originating from a cross between Syrah and Nebbiolo! The grape produces bold and concentrated wine with good tannine structure and a deep colour and flavours. This also makes Rubin suitable to produce Rosé wines. 

According to winemakers Gergiev and Milkov, this is the ‘pink side of Rubin’as it should be.

Rubin grapes are sourced in Brestovitsa and Tsalapitsa, villages near Plovdiv city, from vineyards that are over 40 years old mostly on clay soils.


Vinification: The grapes are hand-harvested and collected in small crates. The must is immediately drained without skin contact. 100% of the wine is fermented and aged in 500-liter acacia wood barrels, allowing subtle micro-oxidation that enhances roundness and softness without adding extra wood flavor. It is then aged on the lees for several months to increase complexity and extract.

Our tasting notes: The wine has a salmon-pink color. On the nose, it reveals pronounced aromas of white flowers, white cherry, strawberry, a hint of vanilla, and subtle spicy notes. It has a slightly creamy and round structure with a medium body and a juicy, inviting character. On the pallet yet fresh, thanks to vibrant acidity and spiciness, which contribute to a surprisingly long lasting aftertaste.


With food: prawns, fish, lobster, grilled fish or meat and vegetables. Light fruit desserts
