In one of the most beautiful areas above the winery of Edoardo Miroglio in the village of Elenovo (having a PDO or AOC status), in the Nova Zagora region, lie their vineyards with Mavrud. Set on hilly terrain with clay-slate soils, it truly is a luxury for the Mavrud grape. It is from there that the Reserve Elenovo Mavrud emerges, the work of oenologist Edoardo Miroglio - Ralitsa Doncheva.
The vineyard is cultivated organically and is 16 years old, with yields not exceeding 700 kg per hectare. Harvest begins in late October, with hand picking, and then fermentation occurs in stainless steel tanks for about 12 days. During alcoholic fermentation, the juice is 'pumped over' into another tank and returned, resulting in more aromatic and balanced red wines, the oenologist shares. The wine matures for 24 months in Bulgarian barrels with a capacity of 500 liters, distributed as follows: 40% new (first filling) and 60% old - second and third filling. After bottling, the wine matures for at least six months in the bottle.
The concept of Edoardo Miroglio Reserve Elenovo Mavrud is to showcase the "marriage" between the traditional, noble Bulgarian grape variety and Bulgarian oak. An elegant wine with a powerful body, rich in soft tannins, that was our goal, they say from the Edoardo Miroglio winery.
Our tasting notes: The wine has deep ruby colour. Intense and expressive nose typical Mavrud. The aromas are of ripe cherries, black plums, spice of musk, cinnamon and black pepper as well of dried leaves, smoke and earthy – mineral notes. In the mouth is again rich and medium - full body with high acidity to balance the fruitiness and high tannins in the wine. It is a typical structured and spice wine of the Mavrud variety with remarkable lasting finish.
Best with: various kinds of meat - cold meat starters, pork with cream sauces, lamb, steak. Aged yellow cheese, Moussaka, casseroles. To fully enjoy this wine, we recommend opening it in advance and/or decanting.
