Variety: 100% Cabernet Franc
Vintage: 2022
Vineyards: Kavarna, PGI Danube Plain. The vines are 10 years old, located near the town of Kavarna and Cape Kaliakra, in the area of Shablenski vineyards. The soils are chernozem, intrazonal, humus-carbonate. The exposure is south-southeast. The altitude is 120 m.
Technology: The grapes are picked by hand in small boxes and transported to the winery. They are sorted by hand and crushed in small open top fermenters. Crushed grapes are cold soaked for 7 days. After the natural increase in temperature, fermentation starts spontaneously and is controlled within the range of 20-22°C. Everyday pump overs, plunging and stomping help to achieve a gentle extraction. After fermentation, the grape mash is pressed into Bulgarian oak barrels for aging.
Technical details: Alcohol – 13% ; Titratable acids – 6.5 g/l ; pH – 3.4 ; Residual sugars – 1 g/l
Aging: The wine is aged for 8-9 months in Bulgarian barrels on the fine lees. It is crafted with minimal intervention and is unfiltered. The appearance of a noble lees is possible.
Tasting Notes: Cabernet Franc from the "cooler" vineyards near Kavarna has a medium-rich purple color. The wine has intense pyrazine aromas of red and green bell pepper, red fruits, and resinous notes. Elegant, medium body with soft tannins and fresh acidity. A pure and exciting varietal Cabernet Franc wine from the northern Black Sea region.
Serve between 14° and 16°C. We advise to open some hours prior consumption.
Food pairing: It goes well with red meats, grilled sausages, lamb, filet mignon, burgers, small game, and hard cheeses.
