“The Guest” Dimyat is the first wine series from deVina, launched in 2020. The label features a wild hare – the symbol of spontaneous encounters with these animals in the vineyard.
Winemaker and owner Dragomir Slavchev explains: “The essence of this project is to promote the Dimyat grape through modern, well-crafted wines. The result is a fresh, elegant wine with a tight structure, where minerality, citrus freshness and a touch of spice take center stage.”
Terroir & Vineyard
Sandy, calcareous soils rich in fossils. A cool microclimate with constant sea breezes, just 15 km from the Black Sea. The 7-year-old Dimyat vineyard (1.5 ha) is located on an eastern slope at 170 m altitude. Hand harvesting in small 10 kg crates took place on September 29, 2024.
Vinification
After cooling and a short 6-hour skin contact, fermentation took place in stainless steel tanks under controlled temperatures of 14–15 °C. No oak ageing.
Our Tasting Notes
• Color: Pale straw, typical of Dimyat wines.
• Nose: Clean, with aromas of stone fruit, apple, minerality and subtle spice.
• Palate: Playful and lively, with a light body, confirming the nose with green apple, lemon and a saline, refreshing finish. An excellent example of a modern and distinctive Dimyat varietal wine.
Food Pairing
Perfect with fish, seafood, soft creamy cheeses and goat cheese, chicken breast and light vegetable dishes.
Serving: Best enjoyed well-chilled, around 6–8 °C.
