Vintage: 2025
Vineyards: Slanchevo village, Varna municipality, Varna region, PGU Danube Plain. The vines are 19 years old, located next to Varna Lake. The soil is sandy-clay carbonates. The exposure is southeast. Altitude – 80 m.
Technology: The grapes are picked by hand in small boxes and transported to a cold room. The cooled grapes are manually sorted, crushed, and gently pressed at low pressure. The finest must is cold settled and racked for alcoholic fermentation.The temperature of alcoholic fermentation is controlled at 11-15°C.
Technical details:Alcohol – 13% Acids – 6.5 g/l Residual sugars – 1 g/l
Aging: The wine is aged for 3 months on fine lees.
Tasting Notes: Sauvignon Blanc from the vineyards near Slanchevo has color of a deep with light green hues. The aroma is concentrated in the direction of fresh tropical fruit - mango, supported by a feeling of limestone and a hint of green nettle. Tight medium body with well-pronounced minerality and inviting acidity. Serve between 8° and 10°C.
Food pairing: It is successfully combined with delicate cheeses such as brie, mozzarella, and ricotta or with fresher and saltier cheeses such as feta or goat cheese. Fish, seafood, crustaceans, white meats, and green salads are also suitable additions.
