Rubin is a traditional Bulgarian grape variety, originating from a cross between Syrah and Nebbiolo! The grape produces bold and concentrated wine with good tannine structure and a deep colour and flavours. This also makes Rubin suitable to produce Rosé wines.
According to winemakers Gergiev and Milkov, this is the ‘pink side of Rubin’as it should be.
Rubin grapes are sourced in Brestovitsa and Tsalapitsa, villages near Plovdiv city, from vineyards that are over 40 years old mostly on clay soils.
Vinification: Handpicked grapes in trays. Draining without skin contact. 100 % of the quantity has been fermented and aged in acacia barrels. Acacia barrels of 500-liter volume for gentle contact the wine with the wood to make it rounder and softer.
Alcohol -12,5 % ; Residual sugar - 1,2 gr/l ; TA - 4,9 gr/l ; pH -3,47
Our tasting notes: The wine has a salmon-pink color. On the nose, it reveals pronounced aromas of white flowers, white cherry, strawberry, a hint of vanilla, and subtle spicy notes. It has a slightly creamy and round structure with a medium body and a juicy, inviting character. On the pallet yet fresh, thanks to vibrant acidity and spiciness, which contribute to a surprisingly long lasting aftertaste.
With food: prawns, fish, lobster, grilled fish or meat and vegetables. Light fruit desserts
