“The guest” Misket is the first wine series from deVina, launched in 2020 alongside Dimyat. The labels feature a wild hare, inspired by spontaneous encounters with these animals in the vineyard. Winemaker and owner Dragomir Slavchev explains: this is a modern interpretation with a fresh and aromatic style, light body, and pronounced minerality.
Terroir & Vineyard
Region – Varna, Northern Black Sea Coast, Danube Plain BGA. A cool microclimate with constant sea breezes, just 15 km from the coast, southeast-facing with direct influence of the sea wind. Own vineyards in Komluka (Devnya municipality), near the natural phenomenon Pobiti Kamani (The Stone Forest). Approximately 1.5 ha of Misket vines, 7 years old, on a hill with an east-facing slope of 6–7% at 170 m altitude. Sandy, calcareous soils, low in humus, rich in fossils and limestone.
Vinification
Hand-harvested in small 10 kg crates on 26 August 2024. Grapes were cooled and macerated with skins for 8 hours. Fermentation in stainless steel tanks at 15–16 °C. No oak aging.
Specifications: 13% alcohol, total acidity 5.67 g/l, residual sugar 1.5 g/l
Tasting Notes
Color: Pale straw with silvery highlights.
Nose: Lively and expressive, typical varietal aromas; floral bouquet of freesia, white rose, violets, and ripe melon.
Palate: Fine and well-structured, notes of lavender, rose, and flowers, with a long finish of sweet melon and ripe pear.
Food Pairing
Pairs beautifully with fried or marinated fish, mussels with thyme, soft cheeses, chicken, risotto, Mediterranean pasta dishes, or as an aperitif.
Serving: Best served chilled, around 6–8 °C
